Renowned chef Min Kim has traveled the world honing his skills in some of the world’s top kitchens. He started his culinary journey in Korea before heading to Japan to work in myriad Michelin-starred restaurants. From there, he headed to Australia and then made the jump to the southern coast of China to help open Wynn Palace Macau in 2016, where he earned Michelin stars for Mizumi Macau. Lucky for us, Kim’s craft has brought him to Las Vegas as the newly minted executive chef of Mizumi at Wynn Las Vegas. “I really want to take things to the next level by enhancing dishes and creating new items,” shares Kim. “I’m trying to make Mizumi the best Japanese restaurant in Vegas.” Here, Kim reveals his muses outside of the kitchen. wynnlasvegas.com

IN THREE WORDS, I WOULD DESCRIBE MY STYLE AS… simple, casual and clean.
THE FIVE THINGS LEFT ON MY BUCKET LIST ARE... to get married and have a family; see the Aurora Borealis in Iceland; climb Mount Everest; go on a safari in Africa; and to own a Ferrari.
IF I WASN’T IN MY CURRENT CAREER, I WOULD... be a teacher. When I was in Australia, I spent a lot of time going to schools, volunteering and sharing my knowledge with people.
I WANT MY LEGACY TO BE… that I was one of the greatest chefs, either in Japanese cuisine or in broader terms. I would one day like to open my own restaurant, and I would love for that to prosper and for that to be my legacy and reputation.
MY STYLE HEROES ARE... Brad Pitt and David Beckham.
MY GREATEST ACHIEVEMENT IS... being able to work for Wynn. It’s one of the greatest companies to work for, without a doubt. I have choices to go wherever I want, but I choose to stay because I have accomplished a lot with them and I know my greatest achievement is yet to come, which I believe will happen under Wynn.
FOR KICKS, I ALWAYS WEAR… Nike and Jordan are my go-to for casual shoes, but I also love my Hermès loafers.
MY GO-TO FOR EVENINGWEAR IS... a Brunello Cucinelli or Ferragamo shirt with Brunello Cucinelli slacks and Hermès loafers.
MY FAVORITE MEN’S DESIGNERS ARE... Brioni, Brunello Cucinelli, Hugo Boss and Off-White.
MY FAVORITE WATCH IS… a Breguet 7057BB/11/9W6. It’s a timeless piece and goes well with everything.
MY FAVORITE BLAZERS ARE BY... Alexander McQueen. I find them so sexy with their unique designs and patterns. A simple T-shirt and a cool blazer on top is my usual social event dress code.
MY STYLE PHILOSOPHY IS… KISS—keep it simple stupid.
