In spring 2025, Wynn Las Vegas will open its new coastal Mediterranean restaurant, Pisces Bar and Seafare.
Located near the hotel’s Lake of Dreams, this restaurant will bring diners into the rich depths of the sea with its aquatic-inspired interiors and bountiful oceanic menu.
Helmed by executive chef Martin Heierling, the menu features several jewels of the sea with its dry-aged fish, crudos and caviars. Fresh pasta and fish sourced directly from the Mediterranean evoke feelings of an Amalfi osteria.
Heierling previously worked with esteemed hospitality groups like Starr Restaurants, Urban Purveyor Group, SBE and Noble 33, cumulating in nearly 30 years of experience as an executive chef.
Alongside Heierling, executive pastry chef Jennifer Yee and master mixologist Mariena Mercer Boarini round out the Pisces leadership team. Both will take marine-influenced routes in their dessert and cocktail programs, respectively.
The interiors bring the menu themes to life, incorporating 400 Murano glass orbs, nautical portholes and siren motifs into the space’s design. The bar and seafood display draw eyes and minds to the greatly anticipated meal, while custom artwork adorns the entry rotunda and bi-level dining room. A panoramic view of Wynn’s Lake of Dreams anchors the restaurant to its luxurious Las Vegas setting.
“Pisces’ immersive and transportive atmosphere will channel effortless, seaside chic,” said Todd-Avery Lenahan, president and chief creative officer of Wynn Design & Development. The walls are coated in a luxurious blue velvet complemented with a grid of chestnut beams on the ceiling. Accented with bronze and copper fixtures, Lenahan references the interior design choices to yachtsman chairs and mid-century textile arts.
