What to Expect From the NoMad at Park MGM Las Vegas

Citywide anticipation was immediate when chef Daniel Humm and restaurateur Will Guidara, the duo behind NoMad New York and Los Angeles and the three-Michelin-star-rated, “World’s 50 Best Restaurants 2017” winner, Eleven Madison Park, decided to go all-in on NoMad Las Vegas.

Now open, the passion of the project is palpable with every detail and discovery. Without question, the crown jewel is the jaw-dropping dining room of NoMad restaurant designed by French architect Jacques Garcia and inspired by the Royal Portuguese Cabinet of Reading in Rio de Janeiro and their own library of NoMad New York. “I love how you walk into the small foyer and it actually [heightens] the impact when you walk in,” says Guidara. Elegant chandeliers drip from the 23-foot ceiling, and approximately 25,000 beautifully shelved books from David Rockefeller’s collection acquired via auction surround the entire room. It is only when you’ve settled into a seat at one of the plush, red center booths that the incredulity is fully realized and a sense of amazement sets in. That sentiment blossoms further with time spent while indulging in the incredible cocktails and savoring menu items such as the signature roast chicken stuffed with foie gras and truffles. “I am inspired by the theatricality and grandeur of Las Vegas,” says Guidara. “Throughout the space, we wanted to bring that while still preserving an intimacy that would make NoMad, in its entirety, an oasis in Las Vegas.” Park MGM Las Vegas, 702-730-6785, nomadlasvegas.com
