New Spring Dishes at L'Atelier de Joël Robuchon

MGM Grand’s Michelin starred L’Atelier de Joël Robuchon has launched new, seasonal dishes to complement the warmer weather. Boasting spring produce like white asparagus, the new additions are both light and intricate. Of course, we’d expect nothing less from chef Robuchon, who holds a record 28 Michelin stars—more than any chef in the world. Topping the new selections is a mouthwatering Le Saumon appetizer, or Alaskan salmon carpaccio with rare, imported Espelette pepper, fennel-mango essence, and citrus-lime vinaigrette. Utilizing in-season white asparagus, the L’Asperge Blanche dish is accompanied by Parma ham and a Le Bar sea bass is plated with a zesty ginger-pepper coulis.
