Quarantine Cocktails: Star Mixologist Mark Phelan Shares his Popular White Lightning Cocktail Recipe

During these long quarantine days, we're taking the time to get creative with our cocktails. This week, we're trying a new recipe from Chicagoan Mark Phelan, bar manager of Revival Café-Bar. We hope you'll join us in making this tempting tipple, because, hey, what better time than a quarantine to try your hand at something new? Who knows, you might just discover your hidden talent.
"The White Lightning cocktail is a drier, more vegetal rendition of a white negroni. The mezcal provides heft and liveliness, the pisco adds florality, and the Suze and Cocchi create a balanced, herbal, bittersweet sensation throughout. It's simple to make and a favorite of our bar." –Mark Phelan
White Lightning
1 oz. Mezcal (our bar uses Banhez Ensemble)
1/2 oz. Pisco (our bar uses Barsol Quebranta)
3/4 oz. Suze
1 oz. Cocchi Americano Bianco
Stir all ingredients over cubed ice for about 20 seconds. Strain into a chilled coupe glass. Garnish with grapefruit swath, expressed and inserted.
