Jaleo Las Vegas invites guests to an intimate dining experience featuring sherry wines by Lustau. Head chef Justin DePhillips and Stephen Dragun of Lustau lead an excellent five-course meal. Attendees enjoy the immersive flavors of Spain within the iconic biblioteca room at Jaleo.
Head chef Justin DePhillipsFlavorful entrées and delicious tapas detail the extensive menu at Jaleo Las Vegas by José Andrés. An innovative bar boasts a specially curated selection of sangrias, cocktails and wines. The exceptional eatery offers traditional and contemporary cuisine in celebration of the culture, spirit and regional diversity of Spain.
The first entrée features a tuna belly jamón airbread filled with confit-piquillo espuma. The second course includes a foie gras torchon with figs and PX reduction.
Ibérico pork and trotter sofrito with langoustine highlight the third course. Finally, pork cheek and seasonal mushroom rice conclude the excellent dining experience and prepare the palette for dessert.
Tarte de quesoFollowing the four sensational courses, the night ends in savory bliss. Dessert includes a basque-style 'burnt' cheesecake garnished with truffles and honey. Carefully crafted sherry wine pairings accompany each dish.
Jaleo is inside The Cosmopolitan on the iconic Vegas Strip. The pinnacle of the reimagined restaurant is the paella pit, a uniquely designed open-wood fire pit, one of only three in the world. The Jaleo interior celebrates rich culture with hand crafted embroidery, imagery of the Spanish countryside and doors inscribed with names of favorite tapas.
