Las Vegas Italian dining options have expanded with the opening of Spiedini Fiamma Italian Bistro at Rampart Casino. Located in the main promenade that connects JW Marriot and Rampart Casino, Spiedini Fiamma Italian Bistro is centrally located for guests at both properties to enjoy.

The menu features robust Italian staples from chef Paula Smagacz like the meatballs with ricotta, red sauce and herbs, the veal marsala with mushroom and linguini as well as several other favorites. The baked rigatoni with Bolognese and cheeses makes for a great personal plate or shareable for family-style dining. The short rib is braised for approximately eight hours according to Smagacz and is served with cheesy polenta, broccolini, carrots and rib jus is a savory experience with flavorful depths to be savored.
The pizza oven yields perfectly crispy-crusted creations like the prosciutto fig pizza topped with arugula and complemented with a parmesan cream sauce for the ideal balance of salty, sweet and creamy. Enjoy selections from the wine list or opt for traditional cocktails like the aperol spritz, negroni or limoncello martini or sip on the Hugo which is made with St. Germain Elderflower liqueur, prosecco, lime and mint.
The ambiance of the dining space and open kitchen leans heavily towards natural elements of water and fiamma which translates to flames in the English language. Fireplaces and pits warm up the space while both cool and warm toned blues are strewn throughout with mosaic tiles and a large custom mural hand-painted by artist Ann Marie Vadala.
A wraparound outdoor patio is surrounded by running waterfalls into the koi ponds and lush green landscaping for additional natural elements. A private dining room and somewhat private patio space is available to host parties of up to 50 people for corporate events, weddings, receptions and other momentous events. Dinner is served daily beginning at 5PM.
