Las Vegas truffle season is upon us and Toscana Ristorante & Bar by Eataly has created top-of-the-line dishes that incorporate the delicious ectomycorrhizal fungi in savory and sweet ways. Urbani Truffles has been one of the most esteemed global distributors of Italian truffles for over 160 years and Toscana Ristorante showcases the revered ingredient in a series of dishes offered seasonally.
Begin a truffle-forward dinner with a glass or bottle of wine like the Baracchi Brut Rosé to go along with the carpaccio di manzo e tartufo starter. The thinly sliced beef is topped with marinated mushrooms, Maldon salt and parmigiano, drizzled with truffle sauce and extra virgin olive oil with the final touch of freshly shaved Urbani Burgundy Truffles.
The risotto al tartufo is made with Carnaroli rice, roasted bone marrow, beef sugo and beef tartare. A 24-month-aged parmigiano reggiano and shaved Urbani Burgundy truffle make this risotto irresistible.
Pasta lovers twirl their forks into the in-house-made egg yolk pastas with two-year-aged parmigiano reggiano. The tagliolino al tartufo bianco has a low ingredient count that allows the flavors of white truffles and white truffle butter shine through while the fettuccine al porcini e tartufo combines black truffle butter and porcini mushroom ragu.

The filetto e tartufo is a dish for steak enthusiasts. The 8oz filet from Creekstone Farms is dressed with celery root puree, oyster mushrooms, roasted carrots and Urbani black truffle sauce. Follow each bite with a sip of a spicy red wine like Futuro from Colombaio di Cencio for the perfect pairing. With notes of black pepper and toasted wood, this mid-September-harvested wine brings even more flavor out of the Creekstone Farms filet.
Enjoy gelato made in-house and scooped and dressed with topping tableside for a refreshing finish to a delicious truffle-ladened meal. Opt for shaved truffle for an interesting gelato topping and other gourmet toppings like crushed cannoli shells, Fabbri Amarena cherries, various nuts and flourless chocolate crumble. At Toscana Ristorante & Bar from Eataly, antipasta, primi, secondo and dolce courses are all served truffled up for dining aficionados who love an added burst of the earthy and nutty prized fungi.
