Lighten up this spring at these Las Vegas restaurants, where delicious dishes make fruits and veggies the star of the show.
The magic of Italy can be found in St. Mark’s Square at The Venetian Resort Las Vegas, where Brera Osteria is serving fare inspired by the childhoods of Matteo Ferdinandi and executive chef Angelo Auriana. Explore the restaurant’s best plant-based dishes through its four-course Chef’s Go Vegan tasting menu. “Vegans are often forgotten, so we created a new menu that is plant-based and full of flavor using the freshest seasonal ingredients with an artistic presentation,” says Auriana. Start with a salad of your choice—we’re partial to the chopped option featuring butternut squash, celery root, carrots, quinoa, farro, Tuscan kale and toasted hazelnuts. Then, pick a pasta dish—the garganelli option satiates with cauliflower, onion-tomato crema and buttery garlic breadcrumbs. Entrees include spiced polenta, cauliflower or eggplant while dessert delights thanks to coconut tapioca pudding, passion fruit sauce and seasonal berries. With an entire section of its menu dedicated to the farm and garden, Carson Kitchen elevates its dishes with fresh and seasonal ingredients. The colorful beet tartare arrives topped with pistachio, mandarin and creamy goat cheese while the rainbow cauliflower is brightened up with garlic, lemon juice and potent chile flakes. The neighborhood eatery is the culmination of chef and restaurateur Cory Harwell and the late chef Kerry Simon, who opened the modern American concept in 2014 in Downtown Las Vegas. 702.473.9523, carsonkitchen.com

The award-winning modern Chinese fare from Hong Kong’s beloved Mott 32 is getting the vegan treatment at The Palazzo at The Venetian Resort Las Vegas. Among its new plant-based menu items are the bestselling Shanghainese soup dumplings and the signature smoked “cod.” By utilizing plants and meat alternatives, diners can now indulge in tastes like signature Peking “duck” featuring crispy tofu skin, pickled cucumber and Chinese pancakes; salt and pepper “squid” with coconut meat and crispy baby corn; and stir-fried “beef” featuring okra, bamboo shoot and chile. These dishes are evidence that it is easy being green—even in Las Vegas. The Palazzo at The Venetian Resort Las Vegas, 702.607.3232,venetianlasvegas.com

Chinatown’s new Saffron, The Vegetarian Eatery has a stellar lineup of vegan dishes thanks to the deft culinary skills of chef Louross Edralin, an alum of Gordon Ramsay’s Hell’s Kitchen. Start with the fresh and fruity grilled watermelon salad as an appetizer. Grilled watermelon, pickled lotus root, heirloom tomato, spring mix and julienned carrots are tossed in a Champagne vinaigrette, dusted with cracked black pepper and topped with spicy mayo for an unexpected kick. Then, explore Edralin’s Southeast Asian cuisine with the shareable mushroom duxelles rangoon. Minced mushrooms, garlic and onions are folded into soft sunken tofu, then deep-fried and served with Thai chile sauce— need we say more? 702.201.1926, saffrontheeatery.com
