Getting your greens is easy at Greens and Proteins Healthy Kitchen. The calorie-conscious juice bar and café has garnered a cult following since opening in November. Catering to health nuts, vegetarians, vegans, and those on limited calorie or specialty diets (think raw, HCG and gluten-free), Greens and Proteins boasts a menu so deliciously healthy, it’s hard to believe that most dishes are below 400 calories.

Open daily from 8 AM to 10 PM, the hot spot serves pizzas, sandwiches, wraps, salads and “build-your-own” dishes made with a variety of meats, grains, and toppings. Recently, Wynn Las Vegas chef (and vegan) Stacey Dougan inspired four new raw food dishes for Greens and Proteins’ menu: mock chicken lettuce wraps, chili cheese fries, raw pizza, and Macho Nachos. Also try the Greek pizza on pita crust, hummus appetizer, and tofu fries.

Juices and Vitamix smoothies range from freshly-juiced vegetables or fruits to caffeine alternatives to whoppers like the Chocolate Avocado Peanut Butter Banana Shake, which secretly packs green cabbage, kale, spinach, and flax seed—but all we taste is chocolate!
