The Passionate From Miles Away cocktail is a cool concoction of gin, passion fruit puree and lime juice garnished with Thai basil chiffonade, lime wheel and Thai basil.
Las Vegas is famed for many things, most notably the wide latitude it gives its chefs for reinvention. Celebrated chef Michael Mina has taken his eponymous restaurant at Bellagio to the next level with a series of renovations. Among the upgrades is a raw bar, as well as a new lounge and a private dining room overlooking the Conservatory. But it’s the expansion of the seafood program that’s most notable here, featuring market-catch fish steaks (swordfish, snapper or trout); ginger and scallion broiled whole fish (black bass, Kona kampachi or Gulf flounder); and spice-crusted whole fish fry (madai, branzino or striped bass). “I’ve always felt like this should be the best fish restaurant in Las Vegas... a fish restaurant with no boundaries,” Mina says. “We’re not going to be Japanese or French or Italian. We can be anything we want to be. We’re going to use all of the resources that we have and try to make it as dynamic a fish restaurant as we possibly can.”
