What inspired you to open Amaya Modern Mexican?
My culinary journey began in San Diego’s vibrant food scene, where I explored the region’s fresh seafood and Baja-inspired flavors. This experience and my travels through Mexico—particularly along its coasts—deeply influenced my cooking philosophy. I was captivated by Mexico’s rich culinary heritage and the spirit of celebration and community in its coastal cuisine, especially in places like Tulum.
At Amaya, I wanted to create a menu that reflects this blend of indigenous ingredients and contemporary techniques, with an emphasis on shareable dishes that bring people together. Our goal is to transport guests to a place where food is about more than just nourishment—it’s about connection, culture and creating lasting memories with loved ones. Every dish at Amaya is crafted to celebrate the vibrant flavors and traditions that have shaped my journey in the kitchen.
Why was The Cosmopolitan the perfect location for Amaya?
Amaya perfectly fits The Cosmopolitan’s hip vibe. We feel like we’ve truly captured the vibrant Tulum spirit, and our goal is to make every dinner a celebration. Plus, our tequila and mezcal program has been thoughtfully curated to take guests on an unforgettable journey through the history and flavors of Jalisco. This restaurant is the first of its kind at The Cosmopolitan, and we look forward to enhancing its incredible portfolio of bars and restaurants.

Tell us about the ambiance—who executed the design?
We want every guest to escape the chaos of the Las Vegas Strip and be transported to the beautiful beach town of Tulum. Amaya was designed by the talented Peter Max Bowden and his team at Petermax Co. The inspiration behind the design comes from the rustic elegance and lush, tree-covered landscapes of the Yucatán Peninsula. The space blends intimate alcoves with open social areas, creating a sophisticated yet inviting atmosphere that transports guests to a refined beachside retreat. Our space has an inviting 750-square foot private dining area perfect for hosting large gatherings, making every event feel special. Plus, we offer exclusive bachelor and bachelorette packages, ensuring that everyone’s celebrations are truly unforgettable.

What should we order?
Some of my favorite dishes are the 2-lb. whole lobster paired with chili lobster cream sauce and drizzled with lime; the birria short rib slow-cooked and served with corn puree, pickled onion and cotija cheese; and the showstopping fajita board that captivates the senses from presentation to palate. Other signature dishes include citrusy ceviche, zesty agua chile, fiery tiradito and irresistible lobster enchiladas.

And what should we drink?
We’re excited to showcase a unique beverage program with a carefully curated selection of smooth, aged tequilas and rich, complex mezcals. Signature cocktails include a variety of spirit options, including fun cocktails like the Mano a Mano, which uses Flecha Azul, agave syrup, Seville orange bitters, and cocoa bitters.
